From the moment I stepped into Árido by Ramsés González, I was ensnared by an atmosphere that effortlessly blended contemporary sophistication with a rustic charm, creating an ambiance that was both inviting and impressive. The decor was a masterful symphony of natural elements and modern design, where raw wooden beams intertwined with sleek metal accents, and the gentle glow of dimmed chandeliers provided an intimate and warm illumination. The subtle earth tones of the walls, accented with vibrant, abstract art pieces, lent the space (a medieval wine cellar) a subdued elegance, while the plush seating promised comfort without compromising on style.
The menu at Árido is a testament to the culinary genius of Michelin star chef Ramsés González. A curated journey through the rich and diverse landscapes of contemporary cuisine, each dish from the exclusive tasting menu of 16 passes is an explosive culinary experience, where the essence of fresh products of the region are the protagonist.
My meal began with a delightful array of delicate starters including personal favourites, the Iberian waffle with kimchi, and the spinach and cod toryaki – a tantalising prelude that hinted at the wonders to come. Highlights from the main course smorgasbord were the txuleta steak with Tudela bell peppers and the smoked eel with clay-roasted onion. The presentation was a visual delight, almost too exquisite to disturb with a fork.
Of the selection of deserts, the lemon pie was otherworldly.

No meal at Árido would be complete without indulging in a glass or two from their extensive wine list. The sommelier will recommend the perfect tipple to enhance the overall dining experience.
The service was impeccable, a seamless blend of professionalism and genuine warmth. The staff were attentive without being obtrusive, their knowledge of the menu and wines was impressive, and their enthusiasm for the restaurant’s offerings was evident in every interaction. It is rare to find a dining establishment where every member of the team contributes to an experience that feels both personal and luxurious.
In conclusion, dining at Árido by Ramsés González was an extraordinary experience that transcended the mere act of eating and ventured into the realm of the sublime. It is a place where impeccable taste meets culinary innovation, a sanctuary for those who seek not just a meal, but a journey through the artistry of food, wine and hospitality.
