The legendary haunt brings a multi-sensory celebration to Dubai’s flourishing culinary landscape

SushiSamba Dubai is a haute hotspot that seamlessly blends Asian, Brazilian and Peruvian influences to create a culinary experience that is nothing short of extraordinary, and from the moment I stepped inside, I was in awe of its sophisticated coolness.

As I exited the elevator at the 51st floor of The St. Regis The Palm hotel, walking through the doors, I was immediately struck by the striking decor that adorns the restaurant. While the space features floor-to-ceiling windows that provide breathtaking panoramic views of the Palm Jumeirah, the Arabian Gulf and Dubai’s iconic Skyline, the interiors themself justly compete for the spotlight. Designed by New York based ICrave Design, an expansive 3D-printed bamboo ceiling installation brings all the drama, setting the scene for a culinary adventure that’s just as a unique.

The interior strikes a fine balance between contemporary elegance and daring artistry, with bold splashes of colour and plenty of lush foliage. The lighting is beautifully orchestrated, casting a warm glow that complements the lavish surroundings. 

In this vibrant setting, the mood is electric yet refined. As I settled into my booth-style table, the enchanting view of Dubai unfolded before me. It’s hard to describe the magic that accompanies dining with such an incredible view; it elevates the entire experience, inviting a sense of wonder that lingers throughout the meal.

SushiSamba Dubai’s menu is a testament to culinary creativity, showcasing a diverse range of dishes that delight the senses. I began my adventure with the signature Samba rolls, each piece meticulously crafted and brimming with flavour. The freshness of the Maine lobster was palpable, enhanced by a harmonious marriage of mango, avocado and honey truffle that danced playfully on my palate.

As I ventured further into the menu, I was equally captivated by the robata-grilled dishes. The grilled jumbo tiger prawn, tender and charred to perfection, was accompanied by a lime and seaweed butter that added an invigorating freshness. Each bite was an explosion of flavour, showcasing the chefs’ remarkable ability to meld diverse culinary traditions into a cohesive and unforgettable experience. This was evident in all of the dishes including my fellow diner’s mushroom tobanyaki clay pot, a plant-based dish created from an array of seasonal mushrooms, black truffle, crispy tofu and coconut milk.

The service truly deserves a mention of its own. Each member of staff was impeccably attentive. My main server was knowledgeable about the menu and readily recommended dishes that aligned perfectly with my preferences, ensuring that every moment was tailored to perfection. The team’s genuine enthusiasm for the food and the dining experience lent an air of warmth and authenticity that is often hard to find in the bustling world of high-end dining and in a restaurant of such large scale.

As my meal concluded with the dessert, a tantalising coconut tapioca panna cotta, I found myself reflecting on the evening’s experience. SushiSamba not only offers an array of meticulously crafted dishes and exquisite cocktails but also creates a space where every detail is considered, from the incredible views to the unparalleled service. It’s the kind of restaurant that invokes a sense of celebration, leaving one with memories that linger long after the last bite. Dining here is not merely a meal; it is an exquisite journey that truly encapsulates the spirit of Dubai’s vibrant culinary scene.
